Black Bean Brownies

ingredients

  • 1 box of vegan brownie mix (of your choice)

  • 1 can (15 ounces) black beans

  • Water

  • Optional: vegan chocolate chips or nuts for topping

DIRECTIONs

  1. Preheat your oven to the temperature specified on the boxed brownie mix instructions.

  2. Drain the can of beans and rinse very well to remove bean-flavored liquid.

  3. With the beans still in the can, fill the can to the top with water.

  4. In a blender or food processor, add the rinsed black beans and water.

  5. Blend until smooth, creating a black bean puree. Set aside.

  6. Take a mixing bowl and add the boxed brownie mix.

  7. Add the black bean puree into the mix, whisking until smooth with very little lumps present. If desired, fold in vegan chocolate chips or nuts for added texture and flavor.

  8. Pour the batter into a greased or lined baking pan according to the size specified on the boxed mix instructions.

  9. Place the baking pan in the preheated oven and bake according to the time and temperature indicated on the boxed brownie mix instructions.

  10. Insert a fork or toothpick in the middle of the brownies to check for doneness. Black bean brownies may take longer to set. Add an additional 5-15 minutes baking time depending.

  11. If necessary, check for doneness once again. If it comes out with a few moist crumbs or clean, the brownies are done.

  12. Remove the baking pan from the oven and let the brownies cool in the pan to completely set.

  13. Once cooled, cut the brownies into equal squares and enjoy!
