Breakfast Potatoes

ingredients

  • 2-3 small red potatoes, washed and diced

  • 1/4 bell pepper, seeded and diced

  • 1 small jalapeño, seeded and diced

  • 1 small shallot, diced

  • 1 large garlic clove, minced

  • Pinch of turmeric

  • Pinch of cracked black pepper

  • Pinch of paprika

  • Drizzle of olive oil

  • Chopped green onion for garnish

DIRECTIONS

  1. In a deep skillet, combine all the ingredients except for the green onion. Cook over medium-high heat, stirring frequently, for 7-10 minutes.

  2. Lower the heat to low-medium and cover the skillet. Cook for an additional 5-7 minutes to allow the flavors to meld together.

  3. Remove the lid and check the tenderness of the largest potato by piercing it with a fork. If it is tender, the potatoes are done. If not, let them cook for an additional 2-3 minutes.

  4. Once the breakfast potatoes are cooked to your desired tenderness, remove them from the heat.

  5. Serve the potatoes on a plate or in a bowl and top them with chopped green onion for a fresh garnish.

  6. Enjoy your delicious breakfast potatoes as a side dish or a satisfying breakfast option.
