DIRECTIONS
In a deep skillet, combine all the ingredients except for the green onion. Cook over medium-high heat, stirring frequently, for 7-10 minutes.
Lower the heat to low-medium and cover the skillet. Cook for an additional 5-7 minutes to allow the flavors to meld together.
Remove the lid and check the tenderness of the largest potato by piercing it with a fork. If it is tender, the potatoes are done. If not, let them cook for an additional 2-3 minutes.
Once the breakfast potatoes are cooked to your desired tenderness, remove them from the heat.
Serve the potatoes on a plate or in a bowl and top them with chopped green onion for a fresh garnish.
