DIRECTIONS
In a large bowl, combine the chickpeas, romaine lettuce, parsley, cucumber, cherry tomatoes, shallot, roasted red pepper, pepperoncini or banana peppers (if using), and kalamata olives.
Squeeze the juice of half a lemon over the salad.
Drizzle a light amount of olive oil and balsamic vinegar over the salad.
Sprinkle a pinch of salt.
