ingredients

  • 1 cup vanilla coconut milk (or alternate non-dairy milk of preference)

  • 1/2 tsp baking powder

  • 1 tsp ground flaxseed

  • 1 tsp cornstarch

  • 1 tsp ground cinnamon

  • 6 - 8 slices vegan brioche (we get ours from Trader Joe’s but you can use any thick sliced bread you have on hand)

  • 2 - 3 tablespoons vegan butter for frying

  • Topping: maple syrup, powdered sugar, and/or fresh fruit

DIRECTIONs

  1. In a shallow bowl large enough to accommodate a slice of bread, mix together the coconut milk, cornstarch, flaxseed, baking powder, and cinnamon.

  2. Heat the vegan butter in a pan over medium-high heat.

  3. Before dipping the bread, give the batter a quick whisk as cornstarch tends to settle.

  4. Dip each slice of bread into the batter, allowing it to soak for about 10 seconds.

  5. Cook the soaked bread in the pan for 2-3 minutes per side, or until golden brown. Add more butter or oil to the pan as needed.

  6. Serve the vegan French toast immediately, and if desired, top it with maple syrup, powdered sugar, and/or fresh fruit. Enjoy your delicious vegan French toast!
