DIRECTIONs
In a saucepan, heat a bit of oil over medium heat.
Add the sliced shallot and sauté until translucent, about 2-3 minutes.
Add the microplaned garlic and ginger to the pan and sauté for another minute until fragrant.
Pour in the vegetable stock and bring to a simmer.
Let the broth simmer for about 10-15 minutes to allow the flavors to meld together.
Taste and adjust seasoning with salt and pepper if needed.
Add the chopped green onions to the broth just before serving.
