Tofu Feta

ingredients

  • 1 package firm or super firm tofu

  • 1 lemon, juiced

  • 2 tbsp white miso (optional, but highly recommended)

  • ¼ cup apple cider vinegar

  • ¼ cup water

  • 2 tsp olive oil

  • 2 tbsp nutritional yeast

  • 1 tbsp oregano

  • ½ tsp garlic powder

  • ¾ tsp salt

  • Pinch of black pepper

DIRECTIONS

  1. Press and drain the tofu for at least 20 minutes to remove excess moisture.

  2. In a mixing bowl, whisk together the lemon juice, white miso (if using), apple cider vinegar, water, olive oil, nutritional yeast, oregano, garlic powder, salt, and black pepper to prepare the marinade.

  3. Cut the tofu into small cubes.

  4. Place the tofu cubes in a shallow dish or container and pour the marinade over them, ensuring that all pieces are well coated. You can gently toss the tofu cubes in the marinade for even coverage.

  5. Cover the dish or container and place it in the refrigerator to marinate for at least 2 hours, preferably overnight. This allows the flavors to infuse into the tofu.

  6. Once marinated, the tofu can be enjoyed as is or cooked according to your preference.

  7. Serve the marinated tofu as a delicious protein-packed addition to various dishes or enjoy it on its own.
