Watermelon Feta Salad

Yields: 4 servings

DIRECTIONS

  1. Chop the watermelon, tomatoes, and cucumber into equal-sized chunks.

  2. Thinly slice the green bell pepper and red onion.

  3. In a large bowl, combine the chopped watermelon, tomatoes, cucumber, bell pepper, red onion, and kalamata olives.

  4. Tear some fresh basil leaves and add them to the bowl.

  5. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, and salt to make the dressing.

  6. Drizzle the dressing lightly over the salad to taste and toss gently to combine.

  7. Allow the salad to sit for about 5 minutes to let the flavors meld together.

  8. Serve and enjoy!
