Banana Walnut Muffins

ingredients

  • 3 very ripe bananas

  • 2 teaspoons flax meal

  • 1/4 cup nut or seed butter

  • 1/2 cup monk fruit sweetener

  • 2 tablespoons coconut oil, melted

  • 1 teaspoon vanilla extract

  • 1 1/3 cups almond flour

  • 2/3 cup tapioca flour (or almond flour)

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1 cup chopped walnuts

  • 1/2 cup unsweetened vanilla almond milk

DIRECTIONS

  1. Preheat the oven to 400°F (200°C) and spray a muffin tin with coconut or olive oil.

  2. In a large bowl, mash the bananas. Add the flax meal, nut or seed butter, monk fruit sweetener, melted coconut oil, and vanilla extract. Mix well to combine.

  3. In a separate bowl, combine the almond flour, tapioca flour, salt, baking powder, and cinnamon.

  4. Gradually add the dry ingredients to the wet ingredients in the large bowl. Stir gently until just combined, being careful not to overmix. Some small lumps are fine.

  5. Fold in the chopped walnuts.

  6. Using an ice cream scooper or a 1/4 cup measuring cup, scoop the batter into the prepared muffin tin, filling each almost all the way full. Sprinkle additional walnuts on top.

  7. Bake in the preheated oven for 20-24 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a cooling rack to cool completely. Enjoy!
