Vegan Sausage, Spinach, & White bean soup

ingredients

  • 2 teaspoons olive oil

  • 4 vegan sausage links, uncased

  • 1 medium yellow onion, diced

  • 5 cloves garlic, chopped

  • 1 can white beans, rinsed and drained

  • 2 cups low-sodium vegetable broth

  • 1 bay leaf

  • 3 cups spinach

  • 1 teaspoon cracked black pepper

  • 1 teaspoon salt

  • 1 teaspoon red pepper flakes

  • 2 medium red potatoes, diced

DIRECTIONS

  1. In a large pot, heat the olive oil over medium-high heat. Add the vegan sausage and break it into small chunks. Cook for 7-10 minutes, stirring frequently, until the sausage is browned on all sides.

  2. Reduce the heat to medium. Add the diced onion, chopped garlic, and diced potatoes to the pot. Cook for 4-6 minutes, until the onion starts to become translucent.

  3. Add the white beans, vegetable broth, bay leaf, salt, cracked black pepper, and red pepper flakes to the pot. Stir to combine. Reduce the heat to low and let the soup simmer, covered, for 20 minutes.

  4. After 20 minutes, add the spinach to the pot and stir to combine. Cover the pot and continue cooking for an additional 10-15 minutes, until the spinach has wilted.

  5. Remove the bay leaf from the soup. Taste and adjust the seasoning if needed.

  6. Serve the vegan sausage, spinach, and white bean soup hot, and enjoy!
