ingredients

  • 4 cloves garlic

  • 1 bunch cilantro

  • 2 large handfuls of baby spinach or kale

  • 1 large handful watercress

  • 1/4 teaspoon kosher salt

  • Zest and juice of 2 limes

  • 1/4 cup olive oil

  • 2 tbsp water, more if needed

DIRECTIONs

  1. Place all the ingredients in a blender.

  2. Blend until smooth and well combined. If needed, add more water to achieve the desired consistency.

  3. Taste and adjust the seasoning, adding more salt or lime juice if desired.

  4. Transfer the cilantro lime pesto to a jar or airtight container.

  5. Store in the refrigerator for up to a week or use immediately in your favorite dishes.
