Mushroom & Walnut Tacos

ingredients

  • 1/2 cup chopped walnuts

  • 1/2 lb finely chopped mushrooms

  • 1/2 medium onion, diced

  • 1/2 yellow, orange, or red bell pepper, diced

  • 4 cloves garlic, minced

  • 1/2 jalapeño pepper, diced

  • 1 tbsp olive oil

  • 2 tbsp tomato paste

  • 1 tsp liquid aminos or soy sauce

  • 1 tsp dried oregano

  • 2 tsp cumin

  • 1/2 tsp chili powder

  • 1/2 tbsp vinegar

  • 1/4 cup water

  • 1/4 tsp salt

  • Chopped cilantro

  • Toppings of choice (e.g., salsa verde, avocado, diced tomatoes)

DIRECTIONs

  1. In a blender or food processor, pulse the walnuts until you achieve a ground beef texture. Mix the ground walnuts with the finely chopped mushrooms.

  2. Heat the olive oil in a large skillet over medium-high heat. Add the onions, bell pepper, jalapeño, and minced garlic. Cook for about 5 minutes or until the veggies soften.

  3. Add the mushroom and walnut mixture to the skillet, stirring to combine everything well. Cook for an additional 5 minutes.

  4. In a small bowl, whisk together the tomato paste, liquid aminos or soy sauce, dried oregano, cumin, chili powder, vinegar, water, and salt. Pour this mixture into the skillet with the mushroom and walnut mixture. Stir everything together and let it simmer for 5 minutes. Adjust the seasoning with additional salt, if needed. Stir in chopped cilantro.

  5. Serve with corn tortillas, salsa verde, and toppings of choice.
