Rice Cooker Quinoa Con Guandules

ingredients

  • 1 1/2 cups quinoa, rinsed until the water runs clear

  • 2 tablespoons sofrito (homemade is preferred, but store-bought works too)

  • 1 tablespoon sazon seasoning

  • 1 can guandules (pigeon peas), rinsed and drained

  • 1 vegan chicken bouillon cube (if not vegan, you can use a regular chicken bouillon cube)

  • Slightly less than 2 1/2 cups water, but more than 2 1/3 cups (adjust the water based on the moisture from the sofrito)

DIRECTIONs

  1. Add the rinsed quinoa, sofrito, sazon seasoning, guandules, vegan chicken bouillon cube, and slightly less than 2 1/2 cups of water to your rice cooker.

  2. Stir the ingredients to combine them well.

  3. Close the rice cooker and cook according to the manufacturer's instructions until the quinoa is fully cooked and the liquid is absorbed. This usually takes around 20-25 minutes.

  4. Once the quinoa is cooked, fluff it with a fork to separate the grains and distribute the flavors.

  5. Serve the delicious quinoa con guandules as a side dish or main course. It pairs well with a variety of dishes and adds a nutritious and flavorful touch to your meal.
