Caribbean Style Sofrito

Yields: About 2 cups

ingredients

  • 1 head garlic, peeled

  • 2 medium onions, peeled

  • 1 red bell pepper or 10 aji dulce peppers

  • 2 green bell peppers (1 green bell pepper and 1 cubanelle pepper), stemmed and seeded

  • 2 large tomatoes

  • 1 bunch cilantro leaves

  • 1/2 bunch fresh parsley leaves or recao

  • 1 tablespoon oregano (dry and ground), fresh oregano leaves, or 1 teaspoon dried oregano

  • 1/4 teaspoon salt

  • 1 tablespoon olive oil

DIRECTIONs

  1. Place all the ingredients into a blender.

  2. Blend until you achieve a smooth-ish consistency. If needed, add a little water to facilitate blending.

  3. Taste the sofrito and adjust the salt according to your preference.

  4. Add to your favorite recipes like our quinoa con guandules, tofu guisada, or our impossible picadillo!

    Note: Sofrito is a versatile seasoning base used in many Latin American and Caribbean dishes. It adds a depth of flavor and aroma to your cooking. This recipe yields about 2 cups of sofrito, and you can store it in an airtight container in the refrigerator for up to a week or freeze it for longer shelf life.
