Cherry Streusel Muffins

ingredients

For the Muffins

  • 1/2 cup plant milk

  • 2 tsp apple cider vinegar

  • 2 tbsp vegan yogurt

  • 1 tsp vanilla extract

  • 1 cup oat flour

  • 2 tsp baking powder

  • 1/4 tsp cinnamon

  • 1/2 tsp plus 1/8 tsp salt

  • 1/4 cup monkfruit sweetener

  • 1/2 cup to 3/4 cup frozen cherries

For the Streusel Topping

  • 2-3 tbsp dark brown sugar

  • 2 tbsp almond flour (or oat flour)

  • 2 tbsp old-fashioned rolled oats

  • 1/2 to 1 tsp ground cinnamon

  • 2 tbsp plant-based butter

DIRECTIONs

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with baking cups.

  2. In a bowl, mix together the plant milk, apple cider vinegar, vegan yogurt, and vanilla extract.

  3. Add the oat flour, baking powder, cinnamon, salt, and monkfruit sweetener to the bowl. Mix until all the ingredients are well combined.

  4. Carefully stir in the frozen cherries.

  5. Scoop the muffin batter evenly into the prepared muffin tin.

  6. In a small bowl, melt the plant-based butter. Add the dark brown sugar, almond flour, rolled oats, and ground cinnamon. Mix well to create the streusel topping.

  7. Top each muffin with the streusel mixture.

  8. Bake the muffins in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean.

  9. Allow the muffins to cool in the tin for about 10 minutes before removing them. Enjoy!
