Chickpea Mediterranean Salad

ingredients

  • 1 can chickpeas, rinsed

  • 1 head romaine lettuce, washed and chopped

  • 1 handful parsley, chopped

  • 1/2 cucumber, diced

  • 7-8 cherry tomatoes, diced

  • 1 small shallot, minced

  • 1/2 roasted red pepper, chopped

  • 2-3 small pepperoncini or banana peppers, seeded and chopped (optional)

  • Kalamata olives, to taste

  • 1/2 lemon

  • Light drizzle of olive oil

  • Light drizzle of balsamic vinegar

  • Pinch of salt

DIRECTIONS

  1. In a large bowl, combine the chickpeas, romaine lettuce, parsley, cucumber, cherry tomatoes, shallot, roasted red pepper, pepperoncini or banana peppers (if using), and kalamata olives.

  2. Squeeze the juice of half a lemon over the salad.

  3. Drizzle a light amount of olive oil and balsamic vinegar over the salad.

  4. Sprinkle a pinch of salt.

  5. Toss the salad gently to combine all the ingredients and evenly distribute the dressing.

  6. Serve and enjoy this refreshing Mediterranean chickpea salad as a light and satisfying meal!
