The Fluffiest Vegan Pancakes

ingredients

  • 1 1/2 cups flour

  • 1 1/4 cups vanilla almond milk

  • 1 pinch of salt

  • 1/2 teaspoon vanilla extract (optional)

  • 1 capful ACV (Apple Cider Vinegar)

  • 1 tablespoon baking powder

  • 1 tablespoon monk fruit sweetener

  • 1 teaspoon cinnamon

  • Vegan butter or coconut oil for greasing

DIRECTIONS

  1. In a large bowl, combine all the dry ingredients: flour, salt, baking powder, monk fruit sweetener, and cinnamon.

  2. Add in the vanilla almond milk and ACV. Stir until all the ingredients are well combined. If desired, you can also add vanilla extract for extra flavor.

  3. Heat a large griddle or nonstick skillet over medium-high heat. Grease the pan with vegan butter or coconut oil.

  4. Drop about 1/3 cup of the pancake batter onto the hot pan for each pancake. Allow space between each pancake for spreading.

  5. Cook until bubbles form on the surface of the pancakes, indicating that the bottom side is cooked and ready to flip. This usually takes about 2-3 minutes.

  6. Carefully flip the pancakes using a spatula and cook for an additional 2-3 minutes on the other side until golden brown.

  7. Transfer the cooked pancakes to a serving plate and repeat the cooking process with the remaining batter, greasing the pan as needed.

  8. Serve the fluffy vegan pancakes warm and enjoy them plain or with your favorite toppings such as maple syrup, fresh fruits, vegan butter, or nut butter.

Note: You can customize these pancakes by adding ingredients like blueberries, cinnamon apples, chocolate chips, or chopped nuts to the batter before cooking. Get creative with your toppings and enjoy a delicious vegan breakfast or brunch!
