Soy Chorizo Picadillo

ingredients

  • 1 soy chorizo, taken out of the casing

  • 1/4 teaspoon sazon

  • 2 tablespoons olive oil

  • 1 bay leaf

  • 4 tablespoons sofrito (homemade, if possible)

  • 8 ounces tomato paste

  • 1/2 cup green Spanish olives (with pimento)

DIRECTIONS

  1. Place a deep nonstick pan over medium heat and add the olive oil. Once the oil is hot, add the sofrito and stir for about a minute.

  2. Add the sazon, tomato paste, green olives, and bay leaf to the pan. Stir until the ingredients are well combined.

  3. Crumble the soy chorizo and add it to the pan. Reduce the heat to medium-low and cover the pan.

  4. Allow the mixture to simmer for about 15 to 20 minutes, stirring occasionally.

  5. Remove the pan from heat and discard the bay leaf.

  6. Serve the Soy Chorizo Picadillo as a filling for tacos, burritos, or empanadas, or use it as a topping for rice or quinoa.
