Oats

  • 2 teaspoons chia seeds

  • 2 cups rolled oats

  • 2 teaspoons monk fruit sweetener (or sweetener of choice)

  • 2 cups unsweetened vanilla almond milk

  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

Apple Compote

  • 1 apple, diced (with skin on)

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • A sprinkle of ground ginger

  • 1 1/2 teaspoons coconut oil

  • 2 tablespoons water

  • 1 teaspoon pure maple syrup

Toppings

  • 1 1/2 tablespoons granola of your choice

DIRECTIONS

  1. In a medium-sized bowl, combine the rolled oats, chia seeds, monk fruit sweetener, almond milk, cinnamon, and vanilla extract. Stir well to mix all the ingredients together. Cover the bowl and refrigerate overnight to allow the oats to soften and absorb the flavors.

  2. In a medium saucepan, melt the coconut oil over medium heat. Add the diced apple, ground cinnamon, ground nutmeg, ground ginger, water, and maple syrup. Stir well to coat the apples with the spices and sweetener.

  3. Cook the apple mixture over medium heat for about 5-10 minutes, stirring occasionally, until the apples are tender and the flavors are well combined. Remove the saucepan from heat and let the apple compote cool completely.

  4. To serve, spoon the overnight oats into individual cups or bowls. Top the oats with the apple compote and sprinkle with your favorite granola for added crunch and texture.

Note: If desired, you can prepare the oats and apple compote in larger batches and store them separately in the refrigerator for several days. Simply assemble the oats and compote when ready to serve.
