Tofu Pepper ‘Steak’ & Onion

ingredients

  • 1 bell pepper, seeded and sliced

  • 1/4 head broccoli, broken down (including stems)

  • 1 large clove garlic, chopped

  • 1 medium shallot, peeled and sliced

  • 1/4 block of tofu, pressed, drained, and cubed

  • 1/4 cup tamari (can substitute soy sauce or coconut aminos)

  • 1/3 cup water

  • 1/8 cup rice vinegar

  • 1/4 teaspoon ground black pepper

  • Pinch of red pepper flakes

  • Generous drizzle of olive oil

  • 1 teaspoon corn starch

DIRECTIONS

  1. Heat a large skillet over medium-high heat and add a generous drizzle of olive oil. Add the broccoli, bell pepper, and shallot to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.

  2. Add the chopped garlic and cubed tofu to the skillet. Cook for an additional 1-2 minutes.

  3. In a small bowl, combine the tamari, water, rice vinegar, ground black pepper, and a pinch of red pepper flakes. Stir to combine.

  4. Pour the tamari mixture into the skillet with the vegetables and tofu. Stir to coat the ingredients evenly. Continue cooking for another 5-7 minutes to allow the flavors to meld together.

  5. In a separate small bowl, mix the corn starch with 1 teaspoon of water to create a slurry. Add the corn starch slurry to the skillet and stir to combine. Cook for another minute to thicken the sauce.

  6. Remove the skillet from heat. Serve the Pepper 'Steak' & Onion over white or cauliflower rice, or with your preferred side.
