Tofu Pepper ‘Steak’ & Onion

DIRECTIONS
Heat a large skillet over medium-high heat and add a generous drizzle of olive oil. Add the broccoli, bell pepper, and shallot to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.
Add the chopped garlic and cubed tofu to the skillet. Cook for an additional 1-2 minutes.
In a small bowl, combine the tamari, water, rice vinegar, ground black pepper, and a pinch of red pepper flakes. Stir to combine.
Pour the tamari mixture into the skillet with the vegetables and tofu. Stir to coat the ingredients evenly. Continue cooking for another 5-7 minutes to allow the flavors to meld together.
In a separate small bowl, mix the corn starch with 1 teaspoon of water to create a slurry. Add the corn starch slurry to the skillet and stir to combine. Cook for another minute to thicken the sauce.
Remove the skillet from heat. Serve the Pepper 'Steak' & Onion over white or cauliflower rice, or with your preferred side.
