ingredients

  • 2 cups fresh basil leaves, washed

  • 2 cups fresh baby spinach leaves, washed

  • 1 jar of oil-packed sun-dried tomatoes (approximately 8.5 ounces)

  • 3 medium cloves of garlic

  • Salt and pepper, to taste

  • 3 tablespoons of vegan Parmesan cheese (we recommend the one available at Trader Joe's)

DIRECTIONs

  1. In a food processor or high-powered blender, combine all the ingredients.

  2. Blend on high speed until the mixture is well combined, pausing to scrape down the sides as needed.

  3. Taste the pesto and adjust the seasoning according to your preferences, adding salt and pepper as desired.
